For 'Very easy' plants List any that you have found require little or no special lighting, little or no special attention and no special water specs.
The two I have found do best in this situation are:
Java Moss (Vesicularia dubyana) and
Java Fern (Microsorum pteropus)
both of these will tolerate even brackish water and are almost never even eaten by fish, Even Cichlids! Both can also be tied to bogwood or rocks to grow and do not need to be planted in the gravel.
for some other 'easy' plants that do require a light but not so much care try plants like:
Giant vallis
watersprite (lace fern) a quick growing floating fern that can be planted or left in floating rafts for fry to hide on the surface grows very quickly and produces a great many plantlets from old and dying leaves.
amazon sword. A nice easy to grow 'centerpiece' for a tank. unfortunatlet still quite expensive.
